Ingredients
For the French Toast:
- 1 loaf of brioche bread (day-old works best), cut into thick slices (about 6–8 slices)
- 4 large eggs
- 1 cup whole milk (you can substitute with almond milk or oat milk for a dairy-free option)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 tbsp granulated sugar
- Pinch of salt
- 2 tbsp butter (for frying)
For the Filling:
- ½ cup cream cheese, softened to room temperature
- ¼ cup marmalade (orange marmalade is classic, but lemon or grapefruit works great too)
- 2 tbsp powdered sugar
For Garnishing:
- Extra marmalade for drizzling
- Powdered sugar for dusting
- Fresh berries (strawberries, blueberries, or raspberries) for serving
Instructions
Step 1: Prepare the Filling
In a medium bowl, combine the cream cheese, marmalade, and powdered sugar. Mix until smooth and well combined. Set aside.
Step 2: Slice and Stuff the Brioche
Take your brioche bread and cut thick slices, about 1½ inches thick. Using a sharp knife, make a small slit along the side of each slice to create a pocket. Be careful not to cut all the way through. Spoon in about 1 tablespoon of the cream cheese and marmalade filling into each pocket. Don’t overfill, as you want the filling to stay inside during cooking.
Step 3: Make the Egg Mixture
In a large shallow dish, whisk together the eggs, milk, vanilla extract, ground cinnamon, granulated sugar, and salt. Whisk until well combined and slightly frothy.
Step 4: Soak the Brioche Slices
Dip each stuffed slice of brioche into the egg mixture, making sure both sides are well-coated. Allow the slices to soak for about 20-30 seconds per side, ensuring the bread absorbs the egg mixture without becoming too soggy.
Step 5: Cook the French Toast
Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter. Once melted, place the soaked brioche slices onto the skillet. Cook for 3-4 minutes per side, or until each side is golden brown and crispy. Add more butter as needed between batches.
Step 6: Serve
Once all the French toast slices are cooked, transfer them to a serving plate. Drizzle with extra marmalade, dust with powdered sugar, and garnish with fresh berries. Serve immediately and enjoy!
Notes
- Brioche Bread: Day-old brioche is ideal for French toast as it holds up better to soaking. Fresh bread may become too soft and fall apart during cooking.
- Marmalade Varieties: While orange marmalade is the most common, feel free to experiment with different citrus flavors like lemon, grapefruit, or even a mixed citrus marmalade.
- Dairy-Free Option: Substitute the whole milk with almond milk, oat milk, or any dairy-free alternative to make this dish dairy-free.
- Extra Toppings: For added crunch, sprinkle chopped nuts (like almonds or pecans) on top, or for more indulgence, serve with a dollop of whipped cream.
- Storage: Leftover French toast can be stored in an airtight container in the fridge for up to 2 days. Reheat in a toaster oven or on a skillet for the best results.
