Ingredients
Scale
- 1 pound kielbasa, sliced into rounds
- 1 medium head of cauliflower, chopped into small florets
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth (low-sodium, if preferred)
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil, for sautéing
Instructions
- Prepare the Kielbasa:
Slice the kielbasa sausage into 1/2-inch thick rounds. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the kielbasa and sauté until browned on both sides, about 5-7 minutes. Once done, remove the sausage from the pot and set it aside. - Sauté the Aromatics:
In the same pot, add the diced onion and garlic. Sauté for 3-4 minutes until softened and fragrant. - Add the Cauliflower and Spices:
Add the cauliflower florets, paprika, and thyme to the pot. Stir well to combine the flavors, and let cook for 3 minutes. - Simmer with Chicken Broth:
Pour in the chicken broth, bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the cauliflower is tender. - Blend for a Creamy Texture (Optional):
For a creamier soup, use an immersion blender to blend part of the soup. You can blend half the soup while leaving some cauliflower chunks for texture. Alternatively, blend half the soup in a blender and return it to the pot. - Add Heavy Cream and Cheese:
Stir in the heavy cream and shredded cheddar cheese. Let the soup simmer for an additional 5 minutes, allowing the cheese to melt and thicken the soup. - Return the Kielbasa:
Add the browned kielbasa back into the pot. Stir and let the sausage heat through for about 5 minutes. - Season and Serve:
Taste the soup and adjust the seasoning with salt and pepper if needed. Serve hot, garnished with fresh thyme or parsley, and enjoy!
Notes
- For extra creaminess, you can add a bit more heavy cream or cheese based on your preference.
- If you want a spicy kick, feel free to add a dash of cayenne pepper or red pepper flakes.
- The soup can be stored in the refrigerator for up to 4 days and reheated on the stovetop or microwave. It also freezes well if you want to save some for later.
