Instructions
- Preheat Oven & Prepare Baking Sheets:
- Preheat your oven to 350Β°F (175Β°C).
- Line a baking sheet with parchment paper.
- Prepare the Cookie Dough:
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, cream the butter and granulated sugar until light and fluffy using an electric mixer.
- Add the eggs one at a time, beating well after each addition.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
- Stir in the vanilla extract.
- Shape the Cookies:
- Using a cookie scoop or tablespoon, drop rounded portions of dough (about 1.5 tablespoons each) onto the prepared baking sheet, spacing them 2 inches apart.
- Bake the Cookies:
- Bake for 10-12 minutes or until a toothpick inserted into the center of the cookies comes out clean.
- Remove the cookies from the oven and allow them to cool on a wire rack.
- Prepare the Filling:
- While the cookies cool, beat the softened butter in a large bowl until smooth and creamy.
- Gradually add the powdered sugar and continue beating until light and fluffy.
- Stir in the marshmallow fluff and vanilla extract.
- Assemble the Whoopie Pies:
- Once the cookies have cooled, turn half of them bottom-side up.
- Spread a generous amount of filling onto each bottom-side-up cookie.
- Top with the remaining cookies, bottom-side down, to form sandwiches.
- Serve and Enjoy:
- Serve the whoopie pies immediately, or refrigerate them to set the filling for an hour before serving.
Notes
